Caramelized Apple Topping
  1. Bring water, corn starch, cinnamon, nutmeg, and brown sugar to a boil. Whisk the mixture well to get clumps out. Bring to medium heat and whisk for about 2-3 minutes.
  2. Add vanilla extract and apples to mixture, whisk for about 2 minutes, then reduce heat to low. Let simmer for about 10 minutes, whisking in between. Remove from heat and set aside to rest. The sauce will continue to thicken as it rests.
Cinnamon Sugar Tortilla
  1. Combine brown sugar, white sugar, cinnamon, and salt into a bowl and set aside. Bring the oil to medium heat in a frying pan.
  2. Fry the tortillas for about 7-10 seconds on each side, folding and forming the taco shell while in the oil. Remove from the oil and add directly to the cinnamon sugar mixture. Dust the taco on each side with the sugar mixture and set aside.
Cheesecake Filling
  1. Add cream cheese, heavy whipping cream, powdered sugar, vanilla extract, and salt to a stand mixer. Whisk until the mixture forms stiff peak. (If the mixture doesn’t taste sweet enough, do not add more sugar! You will get tons of sweetness from the tacos and the apples).
Assemble the Tacos
  1. Fill each taco with some of the cheesecake filling, top it with the caramelized apples, and enjoy!
